Authors

Jessica Jolley is a Senior Research Scientist (Statistics) within SARDI with expertise in experimental design and data analysis. She has managed and delivered more than 40 food safety projects, particularly for the red meat and pork industries, with direct engagement with processors.

Dr David Hamilton is a Research Veterinarian with 45 years’ experience in the Australian meat industry, the last 22 years associated with SARDI, conducting risk-based research from paddock to plate in collaboration with Australian Pork Limited and Meat and Livestock Australia.

Alex Howard is a Research Officer in the Food Sciences Research Program at SARDI. Alex has been involved in Salmonella research relevant to the Australian chicken egg (layer) industry. In his time with SARDI, he has been involved in research projects relating to food safety and process improvement in collaboration with the red meat and pork industries.
